Bonnie Opens the Doors

Bonnie Cobb opened a small breakfast spot at 38 Genesee Street in the heart of Greene, New York. From day one, everything was made from scratch — the bread, the bagels, the pastries, the sausage. No cutting corners. No shortcuts. That commitment to homemade food built a loyal following that still walks through the door every morning.

Elizabeth Takes the Reins

Elizabeth Maley, a graduate of SUNY Delhi's Culinary Arts Management program, stepped into ownership of the diner. Armed with formal culinary training and a deep respect for Bonnie's homemade tradition, Elizabeth brought professional technique to the kitchen while keeping everything that made the diner special. The "Maley Cobb LLC" name reflects both families — a bridge between the founder and the future.

A Fresh Look, Same Great Food

Bonnie's got a renovation that brightened the dining room and modernized the kitchen — but the menu stayed true to its roots. The stained glass windows, the historic photos of Greene on the walls, the wooden American flag — those stayed. So did the 5:30 AM wake-up call, the from-scratch baking, and the commitment to feeding Greene the way Bonnie always intended.

Thirty Years and Still Rising

Today, Bonnie's is Greene's #1 rated restaurant with 369 Google reviews and a 4.6-star average. Elizabeth and her team — including fan favorites like Timisha and Khailey — serve breakfast and lunch six days a week, plus Sunday mornings. The daily specials still change every day. The bagels still come out of the oven fresh. The regulars still know everyone by name. And travelers on I-88 still pull off the highway because Google told them this was the best breakfast in town. They're right.
